Raspberry Vanilla Patty Cakes

These patty cakes are very reminiscent of the old fashioned patty cakes that we remember our Mum’s taking to afternoon tea parties, coated with icing.  We have created them as a nut free, gluten free, dairy free and refined sugar free version to serve with fresh whipped cream or coconut cream instead of icing!

Ingredients
  1. 1/4 cup raw pear or apple puree (grated with fine microplane grater or blitzed in processor)
  2. 3/4 cup coconut flour
  3. 3/4 cup true arrowroot
  4. 3/4 cup light flavoured olive oil (or macadamia oil)
  5. 1/3 cup raw honey (or more if not sweet enough)
  6. 6 eggs (separated)
  7. 2/3tsp baking soda
  8. 1tsp vanilla extract
  9. Pinch salt
Instructions
  1. Combine oil, egg yolks, honey, pear puree vanilla until light and fluffy
  2. Beat egg whites until stiff peaks
  3. Whisk together flours, baking soda and salt
  4. Fold through the egg yolk mix with the flours and beat until fluffy
  5. Gently fold through the egg whites in batches keeping mixture light and fluffy
  6. Pour 2/3 mixture full into patty cake holder and drop in 1-2 raspberries
  7. Dollop another Tbs mixture to fill
  8. Bake at 160 degrees for about 15-20 minutes
  9. Serve with a dollop of whipped cream. Yum!
Notes
  1. Makes about 24 medium patty cakes.
