Who doesn’t love ice-cream? We never want to feel like we are missing out so have found the best way to recreate the real food version of what we love. An ice-cream after a swim on a hot summer’s day or on a summer’s evening at a BBQ…..our home-made ice-cream using natural sweeteners hits the spot and nourishes at the same time. CHOC MINT ICE-CREAM is the latest Ice-cream flavour with rave reviews in Pinkfarm houses & pairs beautifully with some Real Food Ice Magic for a decadent treat. You will need an ice-cream churn.

We never want to feel like we are missing out so have found the best way to ensure this is to recreate the real food version of what we love.CHOC MINT ICE-CREAM is the latest Ice-cream flavour with rave reviews in Pinkfarm houses. You will need an ice-cream churn.
Ingredients
- 3 cups of pure cream
- 1/2 cup maple syrup
- 10 drops of pure peppermint essential oil (more or less to taste)
- 3 egg yolks
- 1 tabs of true arrowroot
- 2 handfuls of fresh mint leaves
- 3/4 cup of chopped chocolate (I used loving earth raw, coconut milk Chocolate)
Ice Magic Ingredients
- 135g Good quality dark chocolate- the darker the chocolate the lower the sugar (we love to use Loving Earth’s Luvju Coconut Mylk which is sweetened with coconut sugar)
- 90g (about 4-6Tbs) coconut oil
Instructions
- Chop mint leaves until fines in food processor (set aside)
- Whisk egg yolks in bowl.
- Add cream, arrowroot & peppermint & mix well.
- Stir through mint leaves.
- Place in Ice-cream churn for about 1/2 hour.
- Add in choc chips about half way through the churning.
- Place in container and freeze.
- Serve with Home made Ice Magic!
Ice Magic Instructions
- Heat oil and chocolate in a glass bowl over simmering water until combined. (or chop chocolate in Thermo and then heat @ 50 degrees for 5 minutes, speed 3)
- Pour over ice-cream and serve
- Ice-magic can be kept in glass jar out of the fridge.
Notes
- If Ice Magic sets in storage, simply run glass jar under hot water to melt or remelt in thermo or double boiler.
